Menu for lunch

Hi, i'd not figured out what is wrong with my blog setting. Now, I could type my new posts (using the old template) but still it won't be the same as the first few posts..so frustrated! Forget that for now, what I want to do now is to share a couple of recipes that I made for lunch a couple of days ago.

Gulai Darat (Beef on bones braised in spicy coconut milk) which i made in the pressure cooker so that the beef will be tender and juicy. So here goes the recipe:

500g beef on bones (cut into small pieces)- you could use any cut of meat you really like, doesn't matter so much, or you could even use lamb
2 potatoes (cut into cubes)
1 red chilli (seeded and cut longitudinally)
1 can/400ml of coconut milk ( I used Chaokoh coconut milk)
1 tbsp cumin seeds (jintan putih)
1 tbsp fennel seeds (jintan manis)
1 tbsp coriander seeds
3 tbsp kerisik (toasted dessicated coconut)
1-2 asam keping (depending on the size) -probably u could substitute this with tamarind paste
3 tbsp brown sugar (use less/more to your liking)
1 1/2 tsp of salt
4-5tbsp of cooking oil/olive oil/vegetable oil (whatever you have in the kitchen)
*2 medium onions /10 shallots
*2 cloves garlic
*2 tbsp chilli paste/6 dried chillies
*4 slices of ginger
*3-4 slices of galangal (lengkuas)

Note: I used pressure cooker to cook this dish, if you don't have it don't worry, use normal saucepan but you have to cook the meat until tender.

Method:
  • Blend together the * ingredients.
  • Heat up the cooking oil in the pressure cooker to fragrant the fennel seeds, cumin seeds and coriander seeds for about 2-3minutes. Then add blended *ingredients and continue to stir for about 5-7 minutes.
  • Add in the beef cubes and stir well. Then add the rest of ingredients. Place the pressure cooker top and wait for 30-40minutes.
  • Ready to be served with warm rice!


Tadaaa..Gulai Darat ready to be eaten!

My second recipe was Stir-fried Okra/Lady's Fingers with egg (Bendi goreng telur)
This recipe is very easy to make and its yummy!!
What you need are:
  • 250g of okra (slice them thinly)
  • 2 eggs (lightly beaten)
  • 1 tsp of salt
  • 3-4 tbsp of cooking oil/olive oil
  • 1 onion ( slice thinly)
  • 1 leek ( I used the whole thing as I love the green part)- slice thinly
  • 3 cloves of garlic (crushed and chopped)- you could use less/omit if you don't like garlic but I love garlic!
What you need to do is:
  1. Heat up the oil in the pan, then sweat the onion, leek and garlic.
  2. Add in the salt and the okra. Cook the okra until wilted a bit.
  3. Then push all the okra to one side of the pan, add in the lighly beaten eggs into 3-4 portions. Make sure that the eggs are scrambled (this is what you want).
  4. Then mix together the wilted okra and the scrambled eggs. And viola!! you have it, stir-fried okra with egg.
