Ambong/Apam Dewa

This kuih is a traditional kuih of Eastern Peninsular Malaysia. As a Kelantanese, I call this kuih as ambong, but Terengganu people call it apam dewa. I remembered when I was little, my mom would make this kuih for us for evening tea. Traditionally, duck eggs were used but I'd substitute duck eggs with chicken eggs. if duck eggs were used, the apam will be fluffier and creamier.

Bahan-bahan ( Tin berukuran 10 inci )

250 g tepung berserbuk penaik
200 ml santan
200 g gula halus
2 biji telur Gred A
1 camca teh vanila esen
1 camca makan ovallate
Secubit garam
Pewarna (eg: merah dan hijau - ikut kegemaran masing2)

Cara-cara

1. Satukan kesemua bahan dalam mangkuk adunan, kecuali bahan pewarna.
2.Pukul dgn speed perlahan sehingga semua bergaul mesra. Kemudian lajukan speed dan putar hingga adunan kembang dan pekat.
3.Bahagi 3. Satu dibiarkan kosong, satu diwarnakan hijau dan satu lagi warna merah.
4.Dalam tin yg telah dilenser dgn mentega, bubuh warna merah dan hijau secara berselang seli diikuti bahagian yg tanpa warna pada atasnya.
5.Gunakan spatula, buat pusingan satu arah sebyk 1 - 2 kali.. Kukus atas air mendidih selama 45 minit. Angkat dan keluarkan dari acuan. Biar sejuk baru dipotong.

p/s: I've used small muffin cups instead and down the steaming time to 15mins.

Apam PolkaDot

I saw this apam recipe a few months back, but had not had the time to make them until last weekend (plus, the recipe requires ovellete and I didn't have it, until I asked my mom back in Malaysia to post it to me). It's quite easy to make but you have to spend time on dotting the batter for the polka dot effect. But of course it's all worth it, they looked so pretty with different colours and they were yummy!

MrHubby who usually doesn't like eating kuih muih also liked this apam polka dot. BabyZara also loved this coulurful apam, and the funny part was, she only ate the polka dots. When the polka dots finished, then, she would ask for a new apam. Hehehe..always make me smiles with her cute, innocent actions.

Bahan-bahan ( 50 biji papercup medium )

3 biji telur-dari peti sejuk (gred A)
275 gm tepung gandum
220 gm gula halus
150 ml susu segar@susu cair
3 sudu teh baking powder
1 sudu kecil ovalette
filling-blueberry@strawberry@apa2 ikut citarasa
pewarna

Cara-cara

1. masukkan semua bahan apam kedal mangkuk mixer dan pukul dengan kelajuan maksima sehingga kembang
2. bahagikan adunan kepada beberapa bahagian,kemudian titiskan pewarna mengikut pilihan
3. masukkan setiap adunan berwarna kedalam piping bag
4. picitkan adunan ke dalam mangkuk kertas-setengah sahaja
5. letakkan filling secukupnya-nak senang masukkan dalam plastik kemudian picitkan
6. picit lagi adunan sama @ warna berbeza sehingga hampir penuh.
7. last sekali dot-dot kan dengan warna pilihan,kemudian kukus selama 10-15minit @ sehingga masak.

Assorted Doughnuts

MrHubby was oncalled yesterday and I decided that I would make him doughnuts for his tea. I was planning to make these doughnuts since last week as it was Doughnuts' Week last week. This recipe is a keeper. The doughnuts were so soft and delish. And I made white chocolate and milk chocolate topping and sprinkles (roasted almond flakes, chocolate rice, sugar sprinkles) for the doughnuts.

It was cold and raining yesteday afternoon when me and Babyzara walked to the hospital. Babyzara was excited to go out for a walk but I didn't as I'll be walking in the rain. MrHubby drove to the hospital yesterday morning so I have no choice but to walk to the hospital. (took about 20mins to get there walking)

So here is the recipe:

Ingredients:
  • 500g bread flour/ strong white flour
  • 100g sugar
  • 11g instant yeast (I used 7g/1 packet instant yeast)
  • 4 egg yolks
  • 200ml water 
  • 100g butter (I used 50g butter and 50g shortening)
  • 1 tsp salt
  • Cooking oil to fry the doughnuts
Decorations (use your imagination):
  • Roasted almonds
  • White chocolate
  • Milk chocolate
  • Sugar sprinkles
Note: Easy way to melt the chocolate is using microwave. Put your chocolate into microwave-safe bowl and using the full power, microwave your chocolate 10secs at each cycle. After each cycle stir your chocolate. Repeat the steps until your chocolate is melted and shiny.

Method:
  1. I dumped everything (except for the cooking oil) into the bread maker (BM) and select the dough setting. Let the BM do its job (1hour and 30mins)
  2. After that, took the dough out and punch the air out. Make the doughnut shape.
  3. Let the doughnuts proof for about 40mins-1hour.
  4. Then fry them on medium heat for 2-3minutes on each side. (be careful not to overcook the doughnuts)
  5. Let them cool on wire rack then you could start to decorate them as you like.
Its easy and its yummy!

Apam Pisang Kukus

Ahhh..feels so glad after a couple of days that I finally could update my blog. The blogger webpage was down and I could not sign into the blog. I hope it wasn't just me! 

Anyway, back to the main thing, the kuih I made this morning using my over-ripened banana. I initially wanted to use them to make jemput-jemput pisang. Then I found a recipe in www.tiffinbiru.blogspot.com and decided "I'm making those apam!" Thanks to Dapur Tanpa Sempadan (DTS) for the recipe!

They are easy to make and they are yummy too! I'd changed a few ingredients and below is my recipe:

Apam Pisang (Steamed Banana Bun)-make 12-13 apam using the muffin silicone cups
  • 1 cup of plain flour (seived)
  • 1/2 tsp of baking powder (seived together with the flour)
  • 2 eggs
  • 100ml of sunflower oil
  • 1/2 cup brown sugar
  • 200g ripened banana
  • 1/2 tsp of soda bicarbonate
  • Pinch of salt
  • Dessicated coconut+pinch of salt 
Method:
  1. Brush your cups with oil and set aside.
  2. Smash the banana, soda bicarbonate and salt together until creamy.
  3. Beat the eggs, sunflower oil and brown sugar until fluffy. Then add in the banana mixture. Mix well.
  4. Add the seived flour and mix well.
  5. Spoon in the batter into the oiled cups (3/4 full) and steam them for 15minutes.
  6. When they are done, eat them with the dessicated coconut. Yummeh ;))

The last resort

Its been 3days since my last post. Not that I was away/busy but I was not been able to post new entry. I'm not sure what was wrong, until now I couldn't solve the problem. The field content was loading non-stop and that's why I couldn't type anything on it. I've upgraded the Firefox, i tried to use internet explorer and google chrome. None of those work. So my last resort at the moment, change the template. This post won't look the same as previous post but I have no other choice as I'm dying to post new recipe that I've tried 3days ago.

So here is the recipe that I've tried, Pau Gebu (Fluffy Steamed Bun). Credited to www.jintanmanis.com for the recipe. Excellent indeed!
I made half of the recipe and I got 9 big and fluffy buns!

Look! Its so fluffy and yummy! Even MrHubby was happy with these steamed buns!!

Bahan-bahannya (Ingredients)

500 gram tepung pau ( 500g low protein flour/cake flour)
3 sudu besar shortening ( 3tbsp shortening)
220ml air suam+1 sudu kecil garam (220ml warm water + 1tsp salt)
3 sudu besar gula (3tbsp sugar)
2 sudu kecil baking powder (2tsp baking powder)
4 sudu besar water roux (4tbsp water roux)
2 1/2 sudu kecil yis (2 1/2 tsp dry yeast)

Cara-cara untuk membuat pau/bun:

1. Masukkan semua bahan dalam bekas adunan dan uli sehingga tidak melekat pada tangan,(nak guna BM pun boleh) pastikan doh elastik ye, kemudian perap dalam 40 minit atau sehingga satu jam, tumbuk-tumbukkan doh keluarkan angin.


2. Bahagi doh pada beberapa bebola kecil dan masukkan 2 sudu kecil inti kelapa (i've used red bean paste and brown sugar+coconut(recipe in my previous post) for the filling) dan tutup kemas, ulang langkah tadi hingga doh habis.

3. Lapik pau dengan baking sheet atau daun pisang, dan biarkan pau naik dua kali ganda lebih kurang 1 jam, Panaskan pengukus, dan pastikan air betul-betul mendidih, kukus pau dengan api sederhana, tak perlu api terlalu besar selama lebih kurang 7 hingga 8 minit sahaja, bergantung pada saiz pau

My way:
*note: I've used BM and dumped everything in the BM and let the BM (dough setting) do its job ;)
Then, divide the dough into equalish balls, add the filllings then let them prove to double the size (40mins-1hour). Then they were ready to be steamed!

25 gram tepung gandum (25g plain flour)
125 ml air (125ml water)

cara-cara untuk membuat water roux
masukan semua bahan di dalam periuk dan kacau sehingga pekat dengan menggunakan api perlahan setelah pekat angkat dan sejukkan sebelum digunakan.
(whisk the flour and water well, make sure there's no clumps and cook it on slow heat for 2-3mins at 65'C and be careful not to burn it)
Note: water-roux paste could last for 3days before it went stale. And keep it refrigerated and make sure to bring the temp to room temp before using it.

Kuih Ketayap/Kuih Gulung

Yesterday morning i've made kuih ketayap a.k.a kuih gulung for breakfast. Kuih ketayap ialah kuih tradisi yang popular, dibuat daripada lempeng nipis yang digulung bersama inti kelapa muda dan gula melaka. So, here is the recipe and step by step pictures to follow:

Bahan2 lempeng:
  • 1 cawan tepung gandum
  • 2 biji telur
  • 2 helai daun pandan
  • 1 1/2 cawan santan (boleh diganti dgn fresh milk)
  • 1 1/2 sudu kecil garam
  • 2 sudu besar minyak masak
  • Beberapa titik pewarna hijau
Bahan2 inti:
  • 1/2 biji kelapa parut
  • 3/4 cawan gula merah/gula melaka (boleh dikurangkan)
  • 1 helai daun pandan
  • Air (bersamaan dengan kuantiti gula merah/gula melaka)
Cara-cara:
  1. Untuk inti; Masukkan kelapa parut dan gula merah tadi serta sehelai daun pandan. Kacau sehingga sebati sehingga inti kelapa tadi bercampur dengan gula merah selama 10-15 minit. Inti akan menjadi warna keperangan. Angkat. Buang daun pandan tadi.
  2. Untuk lempeng; Kelapa parut tadi di blend dengan daun pandan dan perah, ambil patinya. Jika u all guna santan segera, just blend dengan daun pandan dan tapis. Ambil tepung masukkan ke dalam mangkuk letakkan secubit garam dan campurkan pati santan yang telah di blend dengan daun pandan tadi. Kacau sehingga sebati . Kemudian masukkan telur serta minyak dan kacau lagi. Jika u all nak warna original ketayap tak payah guna pencelup, sebab warna daun pandan tadi akan membuat adunan tadi warna hijau, jika u all nak tambahkan sedikit lagi perwarna, letaklah 2-4 titik ke dalam adunan anda.
  3. Panaskan pan, letakkan sedikit minyak dan sendukkan 1 senduk adunan tadi dan layangkan pan agar adunan tadi bulat. Masak sehingga 2-3 minit, angkat jangan terlalu lama. Setelah angkat terus masukkan inti dan gulung. (Cara gulung; , lipat kedua dua tepi sedikit dan gulung melentang. Ulangi sehingga adunan tadi habis. Siap untuk disantap.
I did this kuih using different method, as per MrHubby: "ur cheating!tak aci!"..hehehe..why???

I've used instant pancake batter from Betty Crocker! Hahaha..i just add milk (u can use water as per instruction) and viola! my lempeng batter is ready ;p (and i've added yellow coloring instead of green coloring)

The next step is to make the inti. First, i made the simple syrup with equal quantity of brown sugar and water and cook it until the sugar has dissolved. Then, add the dessicated coconut and continue to cook until the sugar syrup is dry (not too dry)
  • 1/2 cup of brown sugar
  • 1/2 cup of water
  • 1 cup of dessicated coconut

Add in the dessicated coconut
And there u have it! U've made the inti kelapa.


So,the next step is to make the lempeng. You'll need a non-stick pan so you'll have a smooth lempeng and it would be easy to take it out from the pan when its cooked.


First, take a kitchen towel, dip it into cooking oil/olive oil/melted butter (whatever you have in the kitchen) and wipe it onto the pan as below (This step is important to get the smooth and shiny skin lempeng)
Wiping the pan with the kitchen towel and olive oil (on medium heat)
Then, pour your lempeng batter (not too much,just enough to cover your pan).

After the lempeng is cooked, take about 1 tbsp of the inti kelapa and roll it just like pictures below:

So,there you go. Its so easy and so delish!!
